Stuffed Mushrooms

1/3 cup pine nuts
3 cloves garlic, minced
1/3 cup fresh parsley, packed leaves, chopped
1/3 cup fresh basil, packed leaves, chopped
1 tablespoon lemon juice
1 cup tomato, chopped
2 tablespoon Braggs or to taste

Put all ingredients into a food processor, except the tomatoes, and pulse chop several times. Stop to scrape down the sides and repeat. Add the tomatoes and continue to pulse chop until just blended. Keep a texture to a pesto, it should not be a puree. Remove stems from mushrooms and stuff the filling into the cap of the mushroom. Place on a dehydrator sheet and dehydrate at 105 degrees for 2-4 hours.

Tomato cups

6 medium tomatoes cut in half and pulp reserved for filling
½ small cucumber
2 sticks celery
2 spring onions
½ cup fresh parsley
1 tablespoon fresh mint
1 clove garlic
2 teaspoons kelp
½ cup sunflower seeds
1 tablespoon lemon juice
1 tablespoon olive oil (optional)
sea salt to taste (optional)

Pulse in food processor or finely chop all ingredients, mix well and fill tomato halves. (Makes 12)

Zucchini Rolls

Mix together lemon, olive oil, garlic, basil and oregano. Slice squash or zucchini lengthwise, into flat thin strips. Marinate squash in lemon oil. Dehydrate. Roll with what ever fresh greens you prefer. Pin roll with toothpick.

Lettuce Wraps

2 ripe avocados
3 tomatoes, diced
½ jalapeno pepper, diced
2 tablespoon yellow onion, diced
3 cloves fresh garlic, minced
¼ cup fresh cilantro, chopped
kernels from one ear raw organic corn
2 teaspoon fresh lime juice
6-8 large romaine lettuce leaves

In a medium sized bowl, mash the avocado. Add remaining ingredients and stir until well mixed.  Scoop onto lettuce leaves and enjoy.

Ginger Citrus Slaw

Shredded Purple Cabbage
Shredded Carrot
Sliced Cucumber

Dressing
½ milk from young coconut plus a little of the meat.
Juiced orange, half lemon peeling only, and 1-2 inches of ginger.
½ small shallot
Hand full of fresh cilantro
4-5 tablespoons olive oil (or to taste)
Sea salt to taste
1 date (optional)

Blend in blender, toss with shredded veggies.  P.S. I sometimes toss in raw cashews for extra flavor and crunch.
